Ingredients:
1/4 cup bacon drippings
2 tablespoons butter
4 cups diced cooked potatoes
2/3 cup minced onion
2 tablespoons minced fresh parsley
2 cloves garlic, minced
Salt and Pepper to taste
Directions:
Melt bacon drippings and butter in a 9 inch skillet. Add remaining ingredients, stirring gently until coated. Cook mixture, uncovered, turning occassionally until browned on all sides (about 20 minutes). Yield 4 servings
