Alfredo Pizza

Ingredients:

1 Refrigerated pizza crust
1 cup cleaned, dried & chopped fresh spinach
2 Ripe roma tomatoes, chopped or sliced
1 onion chopped
1 Tablespoon flour
1 cup Skim Milk
1/4 cup grated Parmesan cheese
2 cups grated 2% Mozzarella cheese
Salt & Pepper
Directions:
*Prepare the vegetables as directed.
Preheat oven to 450* On pizza stone or non-stick pan, lay out pizza dough (I sprayed with non fat Pam first) Make a circle and pinch edges to form an edge around the crust. In large saucepan combine flour and 2 Tlbsp of the milk until combined. Add remainder of milk, onion, salt and pepper. Cook over medium heat until thick and bubbly, stirring often. Remove from heat and add spinach and Parmesan cheese and stir until spinach is moist and somewhat wilted. Pour mixture evenly on the crust. Top w/tomatoes and then the Mozzarella. Bake until golden brown (about 10-15 minutes).
