Quick and Easy Vanilla Pudding

Ingredients:
1/2 cup sugar
1/4 cup cornstarch
2 egg yolks, beaten
1/4 tsp salt
2 1/2 cups milk
1 tbsp butter
1 1/2 tsp Vanilla Extract

Directions:
Combine all ingredients in a medium saucepan over medium heat. Stir constantly until pudding thickens for about 5 to 10 minutes. Keep refrigerated.

Variations:
Chocolate Pudding: Add 2 unsweetened chocolate squares
Butterscotch pudding: use 1/2 cup light brown sugar firmly packed and 1/4 cup sugar instead of 1/2 cup sugar
