Slightly adapted from Gina's WW Recipes
Ingredients:
12 thin slices lean ham
4 slices reduced fat Swiss cheese
1 egg
1/4 cup water
3/4 cup seasoned bread crumbs
salt and pepper to taste
Cooking spray
Several plain toothpicks
Directions:
Preheat oven to 350°.
Pound the chicken breasts to make them thinner if you wish. This helps when you wrap the cutlets.
Cut each slice of cheese in half. Place a slice of ham on top of the chicken, top with 2 pieces of cheese halves and wrap chicken around to completely cover cheese, using toothpicks to secure. Season with salt and pepper to taste.
Dip chicken into egg wash, then breadcrumbs. (I found it was easier to dip the rolled up chicken into the egg wash and bread crumbs and then securingg with the toothpicks).
Spray cookie sheet with cooking spray and place chicken on cookie sheet. Lightly spray chicken with cooking spray and bake about 35 - 40 minutes, until cooked.
