Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
4 tablespoons white sugar
2 large eggs (beaten)
1 cup milk
4 tablespoons melted butter
1 cup whole corn , from a tin (drained)
powdered sugar , as needed
Directions:
In a large pot or deep fryer, heat your preferred oil to deep fry with to approximately 350 degrees F. In a mixing bowl, sift together the flour, baking powder, salt, and sugar. In a separate bowl, combine beaten eggs, milk, and butter. Whisk egg mixture into dry ingredients; stir in corn last. Drop by tablespoonfuls into hot oil; deep fry about 5 minutes, or until fritters are golden brown. Sprinkle with powdered sugar and serve as soon as possible; best when served very warm.
