Ingredients:
6 ounces cooked Jennie-O Sweet Italian turkey sausage links (1 Lean)
5 eggs (1 and 2/3 Lean)
1 cup sweet red bell pepper, chopped (2 Greens)
1 cup unsweetened almond milk (1 Condiment)
1 1/3 cup cup shredded 2% sharp cheddar cheese (1 and 1/3 Lean)
1/4 tsp salt (1 Condiment)
1/4 tsp pepper (1/2 Condiment)
2 tbsp grated parmesan cheese (2 Condiments)
Directions:
Preheat oven to 350.
Remove sausage from casings. In a medium sized skillet, brown sausage over medium high heat until cooked. Drain and set aside.
Grease a 9 inch pie dish.
In a bowl, whisk the eggs and unsweetened almond milk together. Stir in cheddar cheese, cooked sausage, and chopped red pepper. Add salt, pepper and grated parmesan cheese stirring until combined. Add egg mixture to pie dish.
Bake for 45 to 50 minutes or until knife inserted in the center comes out clean. Remove and let cool in pie dish for 5 minutes before slicing and serving.
4 Servings (1/4 of quiche)
1 Lean, 1/2 of 1 Green (still need 2 1/2 more per serving), and 1.12 Condiments per serving
*If you like more veggies in your quiche, you could increase the peppers to 2 cups instead of 1 cup or you could add any veggies of your choice. Then it will be 1 Lean and 1 Green per serving. You will need to add 2 Greens more to your Lean and Green meal.
